- SLETE SOPPES. XX.IIII.
- Take white of Lekes and slyt hem, and do hem to seež in wyne, oile and salt, rost brede and lay in dysshes and the sewe above and serue it forth.

Ingredients
- 3 medium Leeks
- 1 cup+ White Wine
- Olive Oil
- Salt & Pepper
- 2-3 slices Bread, toasted

Method
- Top, tail and wash the leeks. The recipe calls for the leeks to be 'slit'. This can be interpreted in two ways- one, slit the leeks lengthwise and cook 'whole'. In my trial, I sliced the leek (depends on what type of presentation you want).
- Saute the leeks in olive oil until they soften (don't brown them) and sprinkle with salt/pepper.
- Add the wine and simmer for about 10 - 15 minutes.
- Quarter your toast and serve the leeks over the toast.
