Period Recipe

From the Forme of Cury.

COTAGRES. XX.VIII. XV.
Take and make že self fars. but do žerto pynes and sugur. take an hole rowsted cok, pulle hym & hylde hym al togyder saue že legges. take a pigg and hilde hym fro že myddes dounward, fylle him ful of že fars & sowe hym fast togider. do hym in a panne & seež hym wel. and whan žei bene isode: do hem on a spyt & rost it wele. colour it with zolkes of ayren and safroun, lay žeron foyles of gold and of siluer. and serue hit forth.

Notes

  • Cotagres. This is a sumptuous dish. Perhaps we should read Cokagres, from the cock and grees, or wild pig, therein used. V. vyne grace in Gloss.
  • self fars. Same as preceding Recipe.
  • pulle hym, i.e. in pieces.
  • hylde. cast.
  • hilde. skin.
  • foyles. leaves; of Laurel or Bay, suppose; gilt and silvered for ornament.
