Coffyn is Middle English meaning Pie crust.

The following is an example of a period recipe that mentions coffyns. This recipe was taken from the Forme of Cury.

TARTES OF FLESH. XX.VIII. VIII.
Take Pork ysode and grynde it smale. tarde harde eyrenn isode & ygrounde and do žerto with Chese ygronde. take gode powdour and hool spices, sugur, safroun, and salt & do žerto. make a coffyn as to feel sayde & do žis žerinne, & plaunt it with smale briddes istyned & counyng. & hewe hem to smale gobettes & bake it as tofore. & serue it forth.

There is a footnote that has this to say:

to feel sayde. perhaps, to hold the same.

This may or may not be a joke on the part of original author (make a coffin to feel sad)
