From the Forme of Cury.

PERREY OF PESOUN. XX.III. X.
Take pesoun and seeț hem fast and covere hem til ței berst. țenne take up hem and cole hem thurgh a cloth. take oynouns and mynce hem and seeț hem in the same sewe and oile țerwith, cast țerto sugur, salt and safroun, and seeț hem wel țeratt țerafter and serue hem forth.
